Favorite Indulgence: Maple Almond Flour Cookies

I LOVE COOKIES! This is one of my most loved cookie recipes ever.

MAPLE ALMOND FLOUR COOKIES

Ingredients: (yields 8 cookies)

  • 1cup blanched almond flour (I use Trader Joes’)
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon cinnamon
  • pinch of salt
  • 2 Tablespoons maple syrup (or honey)
  • 2 Tablespoons vanilla essence
  • 2.5 Tablespoons melted coconut oil
  • 2.5 Tablespoons chocolate chips
  • 2 Tablespoons crushed pecans (optional)
  • Wax or parchment paper

Preparation: (10 minutes)

  1. Preheat oven to 350 degrees
  2. Mix all dry ingredients together (except choc. chips and pecans)
  3. Melt coconut oil thoroughly
  4. Mix in oil, maple syrup and vanilla (forks work best, it will become a thick paste)
  5. Stir in chocolate chips and pecans
  6. Spoon half-dollar sized portions onto wax paper-lined cookie sheet

Bake:

Bake for 8-10 minutes. They should feel slightly undercooked but not like dough. They will harden when they cool a bit.
